Brown Sugar Apple Pie Cake

This Brown Sugar Apple Pie Cake is soft, moist, with the perfect blend of ginger, nutmeg and sweet brown sugar. A delicious crumb topped apple pie!


Ingredients:

CRUMBLE TOPPING:

  • 1 cup all-purpose flour
  • 1/2 cup brown sugar, packed
  • 1/4 tsp. salt
  • 1/2 cup unsalted butter, cut into small pieces

APPLE MIXTURE:

  • 3 large apples, peeled, cored and thinly sliced (1/8")
  • 4 Tbsp. packed brown sugar
  • 1 tsp. ground cinnamon
  • 2 tsp. lemon juice

CAKE:

  • 1 box gingerbread cake mix
  • 1-1/4 cup water
  • 1 egg
  • 1 tsp. ground cinnamon
  • 1/2 tsp. ground ginger
  • 1/2 tsp. cloves


Instructions:


  1. Heat oven to 350°F (dark or nonstick pan - 325°F). Spray 8x8-inch pan with baking spray.
  2. In a large bowl, beat together cake ingredients with an electric hand mixture on low for 30 seconds, then turn to medium speed for 2 minutes. Pour into prepared pan.
  3. In a medium bowl, gently toss sliced apples with brown sugar, cinnamon and lemon juice; set aside.
  4. In another medium bowl, stir together flour, 1/2 cup brown sugar and the salt. With a fork or pastry blender, cut in butter until mixture is crumbly. Set aside.
  5. Pour and spread apple mixture over top of cake batter. Sprinkle butter crumble over top.
  6. Bake 30-35 minutes or until toothpick inserted in center comes out clean. Cool completely.
