Easy Low Carb Keto Chicken with Bacon and Ranch

This keto chicken recipe is easy, fast, and calls for simple ingredients. The best part is that the whole family loves it (read the reviews below!). Even the broccoli is irresistible with all of that cheesy bacon Ranch flavor!

Cheese and bacon are the stars of this low carb, keto chicken recipe, so if you like those foods, then you will probably love this recipe!

This skillet sauce is super easy and delicious! If you use a store-bought Ranch seasoning mix, 1 1/2 tablespoons is about half of a packet. Or this homemade Ranch seasoning recipe works really well and is healthier too!

I use a 12-inch T-fal skillet in the photos, but a 10-inch cast iron skillet would also work well. If you don’t have an oven-safe skillet, then just transfer to a baking dish for the baking part of the recipe.

Now just stir in the chicken and broccoli, and then top it off with more cheese and bacon!

Shredded rotisserie chicken is easy and great here. Or you can cook up your own chicken in advance with a grill, slow cooker, Instant Pot, or whatever. There is plenty of flavor and seasoning in the sauce, so keep the chicken itself plain. Ingredients:


  • 2 tablespoons butter
  • 1 1/2 tablespoons Homemade Ranch seasoning mix
  • 4 ounces cream cheese, softened to room temperature
  • 1/4 cup heavy cream
  • 2/3 cup reduced sodium chicken broth
  • 1/4 cup crumbled cooked bacon
  • 1/2 cup shredded cheese
  • 10.8 ounce frozen broccoli florets or about 4 cups broccoli
  • 2 cups shredded cooked chicken

TOPPING:

  • 1 1/2 cups shredded cheese
  • 1/2 cup crumbled cooked bacon


Instructions:


  1. Preheat oven to 350 degrees F.
  2. In an oven-safe skillet, melt butter over medium heat. Reduce heat to medium-low and add Ranch seasoning, cream cheese, heavy cream, broth, crumbled bacon, and cheese. Whisk to combine and cook sauce for about 5 minutes. Meanwhile, steam the broccoli.
  3. Stir the broccoli and shredded chicken into the sauce mixture. Sprinkle 1 1/2 cups shredded cheese and 1/2 cup crumbled bacon over top.
  4. Cook in oven for about 20 minutes, until bubbly throughout and cheese is melted. Then move to top oven rack and broil for 2-3 minutes, if desired. Serve warm.

Quick Tips for this Keto Chicken Recipe:

  • Keep bags of frozen broccoli florets on hand for a quick side dish option. Whenever they go on sale, I stock up!
  • It works perfectly to toss the bag of broccoli in the microwave and let it steam (according to package instructions) while the sauce is cooking. The steamed broccoli is perfectly tender and just about the right amount. Of course, steaming fresh broccoli works too!
